This vintage comes from several very complementary parcels which bring to it the richness of the Ventoux, in particular the parcel right above the Clairette, in the Sisters’ enclosed vineyard. Here the land has mostly a deep layer of clay and lime soil from which the old Grenache receives its powerful and full richness along with the freshness found in these mountain grapes.
Vinification and production
The harvesting is done mostly by hand at the perfect level of ripening, early in the morning, in order to use only perfectly healthy grapes. The grapes are kept in the shade and slowly and carefully brought in one trip to the chai in order to maintain the best freshness. The crushing and pressing are done by a low-pressure machine, and the stems are removed. Once the must has been through the clarification process, it is racked into concrete tanks and fermented at a low temperature. It is aged on thin layer of lees with batonnage style stirring over 6 months.
In order to explain the way we view this Rosé, we present it to you in the same Bourgogne bottles, style Agape of Saverglass (Agape is the Greek for Charity) in antique dark color as our Reds and Whites. The amazing color of our Rosé would attract all eyes in a clear bottle, but we have a higher goal than to sell a wine just for its looks. In fact, as a Provençal winemaker justly remarked: “to buy a wine for its color is like buying a painting for its smell!”
Beyond all other focuses, “Maintenance and Service” of God’s Creation are the two main axes of our conscientious growing approach. Our goal and philosophy are to let nature, through our vines as well as our other products in Provence, produce its fruits in its own timing: today and… tomorrow. The perfect micro-climate along with the famous Mistral, keeping the air clean and healthy, are important agents in accomplishing this goal. The yields are closely monitored according to the different terroirs, vine types, graft carrier, age and density of the plants.
Grape Variety (Cépages)
The color is light delicate pink. The smell is surprisingly complex with hints of citrus and white fruits (peach) which leads into a more floral and berry second taste. The taste buds immediately feel a generous and frank intensity with raspberry and pomegranate flavor, followed by sweet mango and litchi. The final taste is highly dynamic and persistent, expressing the true personality of this wine. The harmony, delicacy, and purity of this batch are a true expression of the splendid terroir that hosted this amazing wine.
